I wanted to share a story this month that has really inspired me. About six weeks ago, Becky attended a Nutrition 101 seminar and decided to sign-up for the eight week individual nutrition program. During our first meeting Becky explained that her thyroid was removed over the summer and she was feeling extremely fatigued, with digestive issues and stomach pain. Becky was very motivated to change what she was eating in order to feel better. With Becky’s extremely busy schedule (2 hour commute to and from work each day, 55 hour work week and 2 year old son at home), I thought she was going to have a tough time changing her diet and lifestyle. However, this gal is a rock star.
She has completely embraced all the changes that I have suggested. She is now cooking in bulk on her days off and balancing all of her meals and snacks (check out her diet record below). She has eliminated gluten from her diet and no longer has digestive issues. She has also found the time to work out three to four times per week in order to reduce stress. Becky commented that, “Eating this way is not hard. It is just balanced.”
Becky is feeling much better since she began to make changes five weeks ago and has even lost over 4 pounds of fat. She is also looking forward to her appointment with a holistic medical doctor that will help her adjust her thyroid medication to help her feel even better. I share this story to motivate those of you who think that eating healthy and balanced is hard. It may take more time. However, the outcome is well worth it.

Sample of Becky’s Diet Record:
Breakfast: 1 serving of Crustless Quiche, herbal tea with 1 T of gelatin, apple
Snack: 7 oz – 2% Greek yogurt with 1 T honey
Lunch: 1 sprouted corn tortilla with 1 oz of cheese and 2 oz of nitrate free organic turkey
Snack: 6 oz of OJ with 1 T of gelatin
Dinner: 3 oz pastured chicken with small baked sweet potato with 1 T of butter
Snack: Milk Shake – 1.5 cups of organic whole milk, 1 T of gelatin, 6 strawberries and ½ banana (shared with son)
